Mini Pizza's

First, I admit, I did not come up with this idea on my own.  I saw a picture of these little pizza's on pinterst, however when I clicked on it the link was a dead link.  So there were no instructions and I have no clue who to credit for this, but whoever you are, my family loves these!  Thank you.

Now on to how I fixed these tasty little pizza's.

First I made some pizza dough, rolled it into little balls and let it sit and rise for a little while, about 15-20 minutes. I have several pizza dough recipes that I like, but I was lazy this time and didn't feel like getting out my recipes, so I just used the recipe on the back of the pizza yeast package.  I also preheated the oven according to the pizza dough recipe.  I bet you could easily use packaged biscuits if you are really lazy short on time.

Next I sliced up some mozzarella cheese, I tried it with shredded,  but I think the slices work out better and the cheese turns out much more even and not as much burnt cheese on the pan in the end (I hate burnt cheese, lol)  I just cut the slices so they fit into the muffin cups.

I gathered some toppings and pizza sauce

(lazy again and just grabbed some store bought, lol)...

Now time to create some pizza's,  First smoosh the pizza dough in the bottoms of the muffin pan, it helps to smoosh it up the side just a little, like a  small bowl shape.  If you want you can let these rise for a few minutes before continuing, or just move right on.  If you let it rise you will get more of a deep dish soft type of crust, and of course if you don't it will be more of a thin crust pizza.

Next add a small spoonful of pizza sauce on each one, I normally don't use a lot of pizza sauce because tomato based things upset my stomach, but for these, if you put too much sauce in, when you bite into them later sauce will squirt out the other side and onto your nice new white shirt..... (to give you a idea of how little I used, I made about 7 dozen of these and only used one jar of pizza sauce)

Now plop down a piece of cheese on each one...

Add a piece of pepperoni (or any toppings you want) then bake, I set the timer for 5 minutes and kept a eye on it after that for the first batch, for my oven they took about 8 minutes.  Let them cool for a few minutes in the pans, then using a fork carefully remove them and put them on a cooling rack to cool for a few minutes, they do get very hot on the inside and do need to cool a few minutes before you eat them, especially if you are feeding them to young children who are oblivious to the painful burns of hot pizza sauce when it squirts into your mouth and sizzles like hot acid, lol.

Now after they are cool comes the most important part.... finding a taste tester...


Little man ate 6 of them and would have eaten more if I would have let him.

I made about 7 dozen of these and my large family ate most of them, but I was able to freeze some of them.  I simply laid then out on a cookie sheet and let them freeze for about a hour, then transferred them to a large bag.  When one of the kids (or husband) wanted a snack the simply took a few out, microwaved them for a minute, rotated them around and them microwaved them for about another minute.



I am hoping this weekend to make a bunch more and get them all in the freezer because they make a great snack and freeze very well.  Enjoy!
